Terziere di Poggio was born from the passion that has always linked me to the traditions and territory in which I grew up. Thanks to its geographical location, Tuscania has always been an area of meeting and mixing between the Roman and Maremma traditions. This mix is also very evident on a culinary level. So why not bring all this into a menu? Here was born "Il Terziere di Poggio", a place that starts from the choice of products, almost all of which comes from the province of Viterbo and lower Tuscany such as cured meats, cheeses, wines, liqueurs and even artisanal pasta produced by an agricultural cooperative in the area and trying to maintain the right balance between typical recipes and new proposals, we set ourselves the ambitious goal of making people discover our territory through what we eat and how we eat it. Since I am not a chef but a simple lover of the healthy cuisine of the past and of the area in which I live, I believe that the main actors at the "Terziere" should be the products and not who cooks them.
