Recipes are written for a 77°F / 25°C kitchen. Yours probably isn't — and that is the difference between a four-hour rise and a seven-hour one. This app is the clock that does the conversion, and then learns your starter. NOT ANOTHER FEEDING REMINDER Most sourdough apps set alarms at fixed intervals. Fermentation doesn't run on intervals; it runs on temperature. This one computes. HOW THE CLOCK WORKS • Tell it the rise time your recipe states and how warm your kitchen actually is. It converts the time using the temperature rule fermentation follows — a few degrees cooler can add hours. • The answer is a clock time, "ready around 5:40", with a projected rise curve. Not a countdown you have to interpret. • Mark the real moment your starter peaks or your dough doubles. Every mark recalibrates the clock to your own starter's pace — after a few marks the prediction is yours, not a table's. • A what-if slider shows how a warmer spot by the oven or a cooler pantry moves the clock. • If the dough would be ready in the middle of the night, it tells you now — and suggests the fridge: retard overnight, bake in the morning. STARTER CARE THAT FOLLOWS THE STARTER • Counter starters get a feeding window built around the projected peak, not a fixed alarm. • Fridge starters get a weekly rhythm. • Feeding ratios shift the peak — 1:1:1 and 1:10:10 are hours apart. The clock accounts for it.
