🍬 Boiled sugar is decided inside a narrow band of degrees. Quoris works that band on the bench: you set out a batch from twelve ingredients: sucrose, glucose, invert sugar, cream of tartar, butter, cream, gelatin, pectin, egg white and more, then fix the cook profile, and a deterministic engine climbs the boil for you 🔥 🌡️ The boiling point rises as water leaves the pan, the curve crosses the eleven classical stages from thread up to caramel and a second model reads the doctoring ratio, agitation temperature and cooling rate to settle crystal size, revealing the texture and which of sixteen confections you have actually made. 🧪 For working out a new batch, move the glucose ratio or pull temperature and watch the outcome shift before a gram is weighed. See the final solids, stage reached, texture band, keeping time and the fault the batch is heading for, together with the correction that answers it. ⚠️ For a run that has gone wrong, open it again, find where the curve crossed the wrong rung and read the named fault: graining, scorching, cloudy candy, fat separation, tough chew and more, with its cause and cure beside it. 🏔️ Cooking above sea level? Enter your altitude and every stage threshold shifts accordingly, so hard crack means hard crack in your own kitchen, not someone else's. 📸 To read the pan itself, photograph it, tap the surface and compare the sampled colour on an eight-step caramelisation ladder with the shade predicted by the simulation. The photo stays with the batch and can be replaced or removed anytime. 📚 Every batch is saved with its curve, profile and verdict, gradually building a personal record of your experiments. Everything is calculated directly on the device and works offline, with support for Celsius or Fahrenheit.
