Panipuri is a common street snack in several regions of the Indian subcontinent. It consists of a round, hollow puri, fried crisp and filled with a mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion or chickpeas. Panipuri has various names, depending on the region. In Haryana it is called paani ke patashe; in Madhya Pradesh fulki; in Uttar Pradesh golgappa, in West Bengal, Bangladesh,and Nepal, phuchka;in parts of Odisha Gupchup, in parts of Gujarat, pakodi; in parts of Bihar ,South Jharkhand, and Chhattisgarh, gup chup. It uses a mixture of boiled gram and mashed potatoes as the filling and is tangy rather than sweetish while the water is sour and spicy. Dahipuri, or dai puri, is a snack which is especially popular in the state of Maharashtra, India. The dish is a form of chaat and originates from the city of Mumbai. It is served with mini-puri shells (golgappa), which are more popularly recognized from the dish pani puri only different is topped with dahi, coriander, onion, tomato, sev instead of pani puri water. Sev puri is an Indian snack and a type of chaat.It is a speciality that originates from Mumbai, Maharashtra Sev puri is essentially made of puri which is loaded with diced potatoes, onions, three types of chutneys: tamarind, chili and garlic and topped with sev.
