Most histamine lists on the internet take food away from you without showing you a single number. This app does the opposite. RANGES, NOT NUMBERS The German, Austrian and Swiss clinical guideline says classifying foods by histamine content "is not reasonable, as the levels vary enormously". It is right: the same Emmental can be 20 mg/kg or 807 depending on the dairy. Here you get the published range, how many samples back it, and the citation — which you can open and read. WE MAY GIVE YOU FOOD BACK Strawberry, banana, citrus, nuts and egg appear on almost every exclusion list. And they measure zero. Only a third of the foods those lists ban is justified by its histamine content. THE PROCESS, NOT THE LIST The three phases of the clinical guideline: reduce for 10 to 14 days, reintroduce one by one the foods YOU suspect, and settle into your own diet, as broad as possible. With cofactor logging, because stress, sleep, your cycle and medication change your tolerance. HOW MUCH YOU HAVE HAD TODAY Histamine adds up across the day and competes for the same enzyme. The daily bucket totals your load in milligrams, always as a range, and warns you when putrescine and cadaverine outweigh the histamine itself. FRESHNESS AND LEFTOVERS The risk is not in the food, it is in how many hours it has been out of the fridge. Measured curves, day by day: tuna at 12 °C multiplies tenfold between day 3 and day 4. WHAT WE DO NOT KNOW Nineteen foods have no published measurement we could find.
