Wine is not a number ticking up. It is a living charge of must sitting in a numbered slot of your barrel wall, and where you put it decides everything. Cellar is an idle wine-cave sim built on POSITIONAL AGING. Every slot has a fixed microclimate: cool deep slots age wine slowly and cleanly, while warm high slots age fast but accrue volatility — a real risk the batch turns to vinegar. Every barrel also has an oak type — neutral, light-toast, or heavy-char — that drifts the wine's flavour along one of three axes every second it sits there. The strategy is RACKING. Move a wine between barrel types at the right stage to steer its 3-axis profile — fruit, oak, acid — into a target band. Land it in the band at peak and it fetches top francs. Bottle too early and it's thin; leave it past peak and it slides over the hill into vinegar. Read profiles precisely with a Tasting Lab, extend the cool cellar for more slow slots, and re-cooper barrels to reshape your recipes. It ages while you're away: come back to bottles ready at peak — and the occasional barrel that over-aged.
